What is capsaicin?
Capsaicin is the compound in chili peppers that binds to the same receptor (TRPV1) that responds to heat and abrasion. Your body isn't actually burning — it's just very convinced that it is.
How the Scoville scale works
Wilbur Scoville measured pungency by diluting pepper extract in sugar water until testers could no longer detect heat. Modern labs use HPLC and convert. Numbers vary by pepper, batch, and formulation.
Why spicy food feels hot
TRPV1 receptors are the same ones your body uses to warn you of dangerous temperatures. Capsaicin activates them without any actual temperature change. Your brain, understandably confused, sounds every alarm anyway.
Why heat levels vary
Growing conditions, ripeness, extraction, and dilution all matter. Two bottles of the same sauce can behave differently. Two spoonfuls of the same bottle can behave differently, especially the second one.
Why milk beats water
Capsaicin is fat-soluble. Water simply relocates the burn to previously uninvolved regions of your mouth. Casein in dairy binds capsaicin and helps carry it away. Full-fat is more effective than skim.
A note on tolerance
Regular exposure can down-regulate TRPV1 sensitivity. This is why chili people get worse over time. It is a chemically documented slide, not a personality trait.
